How much of the menu is cooked in this building
A finishing kitchen that regenerates food prepared elsewhere and a full production line are two different buildings under the same roof. The second wants more extract, more power, more cold store, more staff space and more drainage, and each of those is a plan decision rather than a fit-out one. Settle the menu first, and let the counter follow it.
A finishing kitchen frees floor for seating and shortens the services run; a production line buys a menu nobody else on that road offers. Neither is right in the abstract, and both are easy to change while they are still lines on paper. What is hard is opening with the first and finding in the second season that you wanted the second.
Extract route
Where the extract discharges, and what it crosses
The extract is the one thing that cannot be politely relocated once you are trading. Its riser, its route up through the roof and its discharge point have to be agreed against your boundary, your neighbours and the prevailing wind. Fix all three before the frame is set out, with your services engineer in the room.
Terrace side
Which side takes the outdoor covers, and who serves them
A terrace doubles a small dining room on the days it works and stands empty on the days it does not, so its side, its cover and its shelter from wind are worth an hour with the survey. Then decide whether staff serve it or guests clear it themselves; that answer sets the door count and the run.

What we supply, and what your kitchen consultant does
We supply the building, its envelope, its internal fit and services taken to a stated point. Cooking equipment, extract canopies, refrigeration, gas installation and the suppression over the line are your kitchen consultant’s, unless separately quoted. Agree where that line falls before either party orders anything, and put it in writing.
That line gets written down. An interface schedule is drawn up with you before anything is ordered, listing each service and the point it is brought to — a capped connection, an isolator, a terminated duct — with everything past that point named as your consultant’s supply. It is dull reading, and it keeps a food project out of an argument at the end of it.
The covered edge
The covered edge is what a passer-by actually reads. It runs along the frontage, deep enough to sit under when it rains and open enough to see straight through from the road, and guests reach it on paving that never meets the delivery route. That separation is drawn, not stewarded.
Just inside it, the counter has its own depth. A servery set hard against the entrance turns the doorway into a bottleneck at the hour you most want it clear, so the till stands where a waiting guest is out of the walkway and the room keeps working right through the peak.
The other face of the building is the service face. Deliveries, gas, waste, oil collection and the bin store all sit on that side, reachable from a vehicle, screened from the terrace, and out of sight of anyone eating. Draw that face first and let the dining room take what is left.
How the building goes together
The structure is a steel frame, fabricated to the drawing. Walls, roof build-up and cladding are manufactured panels fixed dry to that frame and screwed up where they stand. There is no cast wall, no laid course and no wet trade in the envelope, which is why the joint grid stays regular and the frame rhythm reads across the finished elevation.
Wet and hot rooms are the exception that has to be designed rather than assumed. Kitchen, wash-up and toilet floors, their upstands, their falls to gully and their impervious wall linings are part of the building itself, because a food premises is judged on those surfaces long before anyone comments on the elevation.
A terrace is a piece of building, not a piece of landscape. Its deck, its edge, its cover, its drainage and the threshold between it and the dining floor all belong to the same drawing, and its level is set with the internal floor so a tray crosses it without a step.
Behind the counter, and in front
Behind the counter the plan runs one way only: goods in, cold and dry store, preparation, the cooking line, the pass, service. Wash-up comes back on its own path, so dirty crockery never travels along the route clean plates came down. Drawn properly that sequence stays quiet at full load; drawn badly, no amount of staff fixes it.
In front of the counter the room has to hold more than one arrangement — one long table, a scatter of small ones, or a standing crowd — because a dining room seated once and beautifully is worth less than a room that changes on a Thursday. Where the services and the fixed furniture land is what decides that.
Then the parts an operator thinks about only when somebody asks: staff changing and somewhere to eat, an accessible guest toilet, a cleaner’s store with a sink in it, and a bin store that can be washed down. They take real floor. Leaving them off the first plan does not free that floor, it moves the problem into the dining room.

The extract riser, and the terrace it clears
The terrace, morning and evening
The terrace is where the building earns a second life each day. In the morning it takes coffee and shade on one side; by evening the sun has moved off it and the same tables are the ones people ask for. Which side that is on your ground is settled from the survey, never from a photograph.
Its cover matters more than its size. A terrace with nothing overhead is unusable in a monsoon and unusable in the middle of a hot afternoon, so the cover, the wind shelter and the drainage of the deck are drawn with the building rather than added to it later.
And the threshold is what makes the two read as one room. A flush junction between the dining floor and the deck, with the ceiling line carrying through above it, is what stops a terrace looking like an afterthought bolted onto the frontage.

Most food buildings sold as prefab are a form rather than a plan: a serving hatch cut in a box, photographed at dusk. It will pour a coffee. It will not hold a cold store, a wash-up, a staff changing space and an extract riser, which is why an operator who buys one ends up building the restaurant behind it.
The covered edge sells the room. The sign only confirms it.
This page is written the other way round. The building is a whole food-and-beverage premises — production, service, seating, welfare and waste under one design — and the method is what lets it go up on ground where conventional building struggles. The completeness of the plan is the argument; the method is only how it gets built.
A hatch cut in a box will pour a coffee. It will not hold a wash-up.

02Behind the counter, and in front of itThe one-way production side, the room that has to work several ways, and the welfare nobody puts in a brief.
Ventilation is the difference between a room people sit in and a room people leave. Cooking odour finds seating through the pass, through doors and through any path the pressure regime allows, so make-up air and the relation between kitchen and dining pressure belong on the drawing rather than in a note written after the tables are in.
Dirty crockery must never travel back along the route clean plates came down.
Drainage is the other one. Floor gullies, the grease interceptor, its access for emptying and the fall of the pipe from wash-up down to it all have to be co-ordinated with the slab before it is set out. That is a boundary we draw and your services engineer confirms against your ground.
Noise runs both ways. Extract fans, refrigeration condensers and the wash-up are the loud parts of a food building, and none of them should be pointed at the terrace, the neighbours, or the windows of whatever stands next door. Where they sit is a plan decision, and it is very hard to correct once the plant is mounted.
Leaving welfare off the first plan moves the problem into the dining room.

03How the building goes togetherThe frame, the wet rooms and the terrace — the parts a food premises is actually judged on.
Nothing about this method is a compromise on the room. The panel joint, the frame bay and the dry junction are visible where they belong and invisible where they do not, and a dining room built this way carries flat linings, real joinery and a proper floor. What changes is where the work is done, not the standard it is done to.
A terrace is a piece of building. Left to the site it becomes a slope with furniture on it.
What the method genuinely buys is a site nobody wants to build on conventionally: a hill road, a plantation, a lake edge, a campus with a trading neighbour on the other side of the wall. Components arrive flat and go up dry, so the mess and the water a wet site needs are largely not there.
The threshold is what stops a terrace looking bolted on.

04What comes before a component is madeHow the building reaches your ground, what the group’s figures cover, and the limits this page keeps to.
No finished room is ever put on a lorry. What the factory fabricates is the frame; what it manufactures and sends out is panels, roof build-up, glazing, linings, joinery and fixings, banded to the assembly order. A food building is then fitted out twice on your ground: first the shell and its services, then your consultant’s equipment into something already dry and lockable.

More than a hundred projects, sixty to ninety days on site and a twenty-five year warranty are the record of the manufacturing group. Read all three as a record: no part of it promises anything about your restaurant until your ground has been walked and a quotation written for it.
Nothing here is stated as our own figure for fire, structure, warmth, noise or energy. Where a published standard covers one of those, we name it, and your licensed consultant certifies the premises against that standard. There is no price on this page either: a food building is quoted against its menu, its covers and its ground.

Questions to close before the kitchen is ordered
Is this a complete restaurant building or a serving unit?
A complete building. Production, cold and dry store, wash-up, servery, dining, welfare, toilets, waste and a covered terrace are planned together as one premises. A serving unit with a hatch is a different product for a different purpose, and buying one usually means building the rest of the restaurant behind it.
Where does the kitchen extract discharge?
That is a project answer, decided with your services engineer against your boundary, your neighbours and the prevailing wind, and this page will not invent a route or a rate for it. What can be said is when it is decided: before the frame is set out, because the riser passes through a roof that closes early.
What is included, and what does my kitchen consultant supply?
We supply the building, its envelope, its internal fit and services brought to a stated point. Cooking equipment, canopies, refrigeration, gas installation and suppression over the line come from your kitchen consultant unless separately quoted. The interface schedule that names every one of those points is drawn up with you, before anything at all is ordered.
Can we extend once we are trading?
Yes, and it is far simpler when the extension sits on the first plan even if it is not in the first phase. A second dining bay or a longer kitchen line drawn now becomes a set of components ordered later. The same extension improvised after opening means closing, opening a finished envelope and rerouting services.
What arrives on your ground?
Material only. Frame members, wall panels, a roof build-up, glazing, linings, joinery and fixings, stacked and numbered to the assembly order. There is no finished room on that lorry, which is precisely the difference between this building and the units that fill the search results for the same phrase.
Who is responsible for drainage, grease and the water supply?
Your engineer, from your survey and your local authority’s requirements. We draw the falls, the gully positions and the interceptor location as a coordination boundary; the connection, the capacity and the consent belong to your site. All three are settled before the slab is set out, because none can be chased in afterwards.
